  2. Whisk together the dressing ingredients in the bowl until it’s emulsified and everything is well blended.
  3. Slice the veggies and add them straight into the bowl of dressing.
  4. Stir gently to combine everything together.

Ingredients
  

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 pound Roma tomatoes chopped
  • 1 English cucumber chopped
  • 2 avocados chopped
  • ½ medium red onion sliced
